It uses sake rice variety Ginfubuki grown from Shiga - a cross between "Yamada Nishiki" and "Tamae". Taking a sip, it has a crisp and sharp impression whith a soft sweetness. It is a good balance to support chefs creative food. This isnt a heavy sake, but it is not a light weight.
