More premium than the brewery's Junmai Daiginjo Yamada Nishiki, it is super premum. Rather than pressing the moromi, only the sake that gently drips naturally—shizuku—is collected. The result is a sake with a clear, refined mouthfeel and delicately layered flavor unique to the shizuku-dori method. Its aroma is calm and understated, while gentle sweetness leads into a quiet, composed finish—an elegant and dignified expression of balance and restraint.Expensive and not a daily drink, but one for occasions.
